Head Chef - Pierino Paolino
I was born in Ottawa, to a loving and supportive Italian family. We didn't have a lot of money, but my mother created delectable delights from seemingly nothing.
This sparked an intense interest in food and how to create interesting and delicious foods.
My apprenticeship began at the young age of 16, I felt energized with the idea of creating food. I soon discovered I needed to start at the bottom, peeling potatoes,
washing dishes, etc... After a time I had the opportunity to work under some of the most amazing chefs. I paid attention to all that
they had to teach me and after a time I began to create my own dishes. After 20 years experience in the culinary industry I have
worked at luxurious hotels such as the Four Seasons, the Hilton, and the Sheraton. Throughout my career I have learned the
classic and traditional methods of the culinary arts as well as modern methods.
My sous chef competent and training have led me to create superb banquets for large and small functions of all types. I have
created my own menus and lead teams through busy and demanding VIP events including Ambassadors from around the world, and
embassies throughout the city. I have also been involved in creating food for the opening of the art museum, and for several
years I have been involved in Canada Day celebrations at Parliament Hill. My professional skills and my attention to detail
has allowed me to prepare successful events for 3000 people. My skills and knowledge allow me to be able to prepare food in
almost any style or for any event. These qualities have led me to D&S Southern Comfort B.B.Q.
On a personal note I am a family man with a loving wife and two beautiful little girls who support me in all I do. Without
them I wouldn't be where I am today.
